Ingredients


For the Cake:


  • ½ cup (1 stick) unsalted butter, browned and cooled slightly

  • 1 ½ cups all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon fine sea salt

  • 1 teaspoon cinnamon

  • ¼ teaspoon nutmeg

  • ½ cup light brown sugar, packed

  • ¼ cup granulated sugar

  • 2 large eggs

  • ¼ cup pure maple syrup

  • 1 teaspoon vanilla extract

  • ¼ cup buttermilk (or whole milk + ½ teaspoon vinegar)

  • 1 ½ cups diced apples (Honeycrisp or Pink Lady)


For the Vanilla Mascarpone Cream:


  • ¾ cup mascarpone cheese, softened

  • ½ cup heavy cream, cold

  • 2 tablespoons powdered sugar

  • ½ teaspoon vanilla bean paste (or extract)


Optional Garnish:


  • Drizzle of warm maple syrup

  • Sprinkle of toasted pecans or crushed maple cookies

  • Light dusting of cinnamon sugar


Directions


Step 1: Brown the Butter


  1. In a small saucepan, melt the butter over medium heat until it foams, then turns golden with nutty specks at the bottom (3–5 minutes).

  2. Remove from heat immediately and let it cool slightly.


Step 2: Mix the Dry Ingredients


  1. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.


Step 3: Whisk the Wet Ingredients


  1. In a large bowl, whisk together brown butter, sugars, eggs, maple syrup, vanilla, and buttermilk until smooth.


Step 4: Combine & Fold in Apples


  1. Gently fold the dry ingredients into the wet mixture.

  2. Fold in the diced apples until evenly distributed.


Step 5: Bake


  1. Pour into a 9-inch round pan (lined and lightly greased).

  2. Bake at 350°F (175°C) for 35–40 minutes, or until golden and a toothpick comes out clean.

  3. Let cool completely before topping.


Step 6: Make the Vanilla Mascarpone Cream


  1. In a chilled bowl, whip together mascarpone, cream, powdered sugar, and vanilla until light, fluffy, and spreadable.


Step 7: Finish Beautifully


Spread or pipe the cream over the cooled cake. Drizzle with maple syrup and sprinkle with toasted pecans or crushed maple cookies for a bakery-worthy finish.
