Ingredients
For the Pistachio Cake:**
2 ½ cups all-purpose flour
2 ½ teaspoons baking powder
½ teaspoon salt
¾ cup unsalted butter, softened
1 ¾ cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
½ teaspoon almond extract (optional, enhances nutty flavor)
¾ cup whole milk
½ cup finely ground pistachios
For the White Chocolate Buttercream:**
8 oz white chocolate, melted and slightly cooled
1 cup unsalted butter, softened
3–4 cups powdered sugar
2–3 tablespoons heavy cream
1 teaspoon vanilla extract
Optional Garnish:**
Whole or chopped roasted pistachios
White chocolate curls or shavings
Edible gold leaf for a festive winter touch
Directions
1. Prepare the Cake:
Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
In a bowl, whisk together flour, baking powder, salt, and ground pistachios. Set aside.
In a separate bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then stir in vanilla and almond extracts.
Alternately fold in dry ingredients and milk, beginning and ending with dry ingredients. Mix until just combined.
Divide batter evenly among pans and bake 25–30 minutes, or until a toothpick inserted in the center comes out clean. Cool in pans 10 minutes, then transfer to wire racks to cool completely.
2. Make the White Chocolate Buttercream:
Beat butter until creamy. Gradually add powdered sugar.
Fold in melted white chocolate and vanilla. Add heavy cream as needed to reach a spreadable consistency.
3. Assemble the Cake:
Level the cooled cake layers.
Place the first layer on a serving plate, spread a generous layer of buttercream. Repeat with remaining layers.
Frost the top and sides with remaining buttercream.
4. Garnish:
Decorate with chopped or whole pistachios, white chocolate curls, and optional edible gold leaf for a festive, elegant finish.
Serving Notes
Pairs beautifully with lightly brewed tea, coffee, or sparkling winter cocktails. Can be made ahead and stored in the refrigerator for up to 3 days.
