  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup grated carrots
  • 1/4 cup raisins or chopped walnuts (optional)
  • 1/3 cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon (optional)

Instructions
1. Make the Scones
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, ginger, cloves, and salt.
  3. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or two forks, cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Stir in the grated carrots and raisins or chopped walnuts, if using.
  5. In a separate bowl, whisk together the buttermilk, egg, and vanilla extract.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined. The dough should be slightly sticky.
  7. Turn the dough out onto a floured surface and gently knead it a few times. Pat the dough into a circle about 1 inch thick.
  8. Cut the dough into 8 wedges and place them on the prepared baking sheet.
  9. Bake for 15-18 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean. Allow the scones to cool slightly on the baking sheet before transferring them to a wire rack.

2. Make the Glaze
  1. In a small bowl, whisk together the powdered sugar, milk or cream, vanilla extract, and ground cinnamon (if using) until smooth.
  2. Drizzle the glaze over the cooled scones, allowing it to set before serving.

3. Serve and Enjoy
  1. Serve the Carrot Cake Scones warm or at room temperature, paired with a cup of tea or coffee.
  2. Enjoy these delightful treats with your loved ones during your Easter celebrations!

These Carrot Cake Scones are a perfect addition to your Easter festivities.
