Tangy cranberries swirl through a buttery vanilla base, while creamy white chocolate melts into each bite like ribbons of snow.

Ingredients

For the Loaf:

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon fine sea salt

  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon almond extract (optional, but lovely)
  • ½ cup sour cream or Greek yogurt
  • ¼ cup milk or cream
  • ¾ cup fresh or frozen cranberries (halved)
  • ½ cup white chocolate chips or chopped white chocolate
  • Optional: zest of 1 orange for a citrus-kissed finish

For the White Chocolate Drizzle:

  • ½ cup white chocolate chips
  • 1 teaspoon coconut oil or butter, for melting

Instructions

  1. Preheat & Prepare:

    Preheat oven to 350°F (175°C). Grease and line a standard loaf pan with parchment paper.
  2. Mix the Dry Ingredients:

    In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream the Butter & Sugar:

    In a large mixing bowl, beat butter and sugar until pale and fluffy. Add eggs one at a time, mixing well after each.
  4. Add Flavor:

    Mix in vanilla, almond extract, and orange zest (if using).
  5. Combine:

    Add the dry ingredients in three parts, alternating with sour cream and milk. Mix until just combined — don’t overmix.
  6. Fold In the Magic:

    Gently fold in cranberries and white chocolate.
  7. Bake:

    Pour batter into prepared loaf pan and smooth the top. Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean. Let cool for 10 minutes before transferring to a rack.
  8. Make the Drizzle:

    Melt white chocolate and coconut oil together in the microwave in 15-second bursts, stirring until smooth.
  9. Finish:

    Drizzle generously over the cooled loaf. Sprinkle with a few dried cranberries or shaved white chocolate for a festive touch.
