Ingredients

For the Loaf:

  • 1 ½ cups all-purpose flour
  • ½ cup almond flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon fine sea salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure almond extract
  • 1 teaspoon pure vanilla extract
  • Zest of 2 lemons
  • 2 tablespoons fresh lemon juice
  • ½ cup sour cream or Greek yogurt

For the Vanilla Drizzle:

  • 1 cup powdered sugar
  • 1 tablespoon unsalted butter, melted
  • 2–3 tablespoons heavy cream or milk
  • ½ teaspoon vanilla extract
  • Optional: sliced almonds or candied lemon peel for garnish

Instructions

  1. Preheat & Prepare:

    Preheat oven to 350°F (175°C). Grease and line a standard loaf pan with parchment paper, leaving an overhang for easy removal.
  2. Mix Dry Ingredients:

    In a bowl, whisk together all-purpose flour, almond flour, baking powder, baking soda, and salt.
  3. Cream Butter & Sugar:

    In a large bowl, beat the butter and sugar together until light and fluffy (about 2–3 minutes).
  4. Add Flavor & Wet Ingredients:

    Beat in eggs, one at a time. Add almond extract, vanilla extract, lemon zest, and lemon juice. Mix until smooth.
  5. Combine:

    Add the dry ingredients in two additions, alternating with the sour cream. Mix just until combined.
  6. Bake:

    Pour into the prepared loaf pan and smooth the top. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.

    Let cool for 10 minutes before transferring to a rack.
  7. Make the Vanilla Drizzle:

    In a small bowl, whisk together powdered sugar, melted butter, cream, and vanilla until smooth and glossy. Adjust consistency with more milk if needed.
  8. Finish:

    Drizzle over the cooled loaf and top with sliced almonds or a few strips of candied lemon peel for an elegant finish.
