These Pumpkin Spice Tiramisu Cups feature layers of spiced pumpkin mascarpone, espresso-soaked ladyfingers, and a crisp ginger snap crumble, finished with a dusting of cocoa and cinnamon.

Ingredients


For the Pumpkin Mascarpone Cream:


  • 8 oz mascarpone cheese

  • ½ cup pumpkin purée

  • ¼ cup granulated sugar

  • 1 teaspoon pumpkin spice

  • ½ teaspoon vanilla extract

  • ½ cup heavy cream


For the Ladyfinger Layer:


  • 12–14 soft ladyfingers (or sponge cake cubes)

  • ½ cup cooled strong brewed coffee or espresso

  • 1 tablespoon maple syrup


For the Ginger Snap Crumble:


  • 6 ginger snap cookies, crushed

  • 2 tablespoons unsalted butter, melted


Optional Garnish:


  • Cocoa powder or cinnamon for dusting

  • A few candied pecans or chocolate shavings


Directions


1. Make the Pumpkin Mascarpone Cream:


  1. In a bowl, whisk mascarpone, pumpkin purée, sugar, pumpkin spice, and vanilla until smooth.

  2. In a separate bowl, whip heavy cream until soft peaks form. Gently fold into the mascarpone mixture. Chill until ready to assemble.


2. Prepare the Ladyfingers:


  1. Mix coffee and maple syrup in a shallow bowl. Briefly dip each ladyfinger or sponge cube — don’t soak too long, just enough to absorb flavor.


3. Make the Ginger Snap Crumble:


  1. Combine crushed ginger snaps with melted butter. Set aside.


4. Assemble the Cups:


  1. In individual cups, layer as follows:


    • 1–2 soaked ladyfingers

    • 2–3 tablespoons pumpkin mascarpone cream

    • Sprinkle of ginger snap crumble

    • Repeat layers until the cup is filled, finishing with pumpkin cream and a generous crumble on top.


  2. Dust with cocoa powder or cinnamon and add optional garnishes.


5. Chill and Serve:


  1. Chill for at least 1 hour before serving to allow flavors to meld.

  2. Serve straight from the cups for an elegant, mess-free presentation.
