Directions
1. Make the Pumpkin Mascarpone Cream:
In a bowl, whisk mascarpone, pumpkin purée, sugar, pumpkin spice, and vanilla until smooth.
In a separate bowl, whip heavy cream until soft peaks form. Gently fold into the mascarpone mixture. Chill until ready to assemble.
2. Prepare the Ladyfingers:
Mix coffee and maple syrup in a shallow bowl. Briefly dip each ladyfinger or sponge cube — don’t soak too long, just enough to absorb flavor.
3. Make the Ginger Snap Crumble:
Combine crushed ginger snaps with melted butter. Set aside.
4. Assemble the Cups:
In individual cups, layer as follows:
1–2 soaked ladyfingers
2–3 tablespoons pumpkin mascarpone cream
Sprinkle of ginger snap crumble
Repeat layers until the cup is filled, finishing with pumpkin cream and a generous crumble on top.
Dust with cocoa powder or cinnamon and add optional garnishes.
5. Chill and Serve:
Chill for at least 1 hour before serving to allow flavors to meld.
